These apple muffins with a cinnamon pecan topping are so yummy! They are moist, tender, and delicious. Make them! Your house will smell so good!
I made these muffins a couple of weeks ago. They are seriously sooooo yummy!
We bought a ton of apples to can applesauce and somehow we ended up with a few Granny Smith apples in our fruit bowl by the end of it. I was surprised at how much I liked these muffins. They are a perfect autumn breakfast. They are so moist, filled with soft apples, cinnamon and vanilla. Plus the streusel topping. Seriously so good.
I also really like the use of applesauce as a replacement for some of the oil/butter in the recipe. It adds flavor and it makes it a little more healthy. So, so good! These are moist, tender, and delicious. These will definitely be a part of my rotation of breakfast foods in the future.
Streusel Topping
1/4 cup unsalted butter, melted
1/2 cup brown sugar, packed
2 tablespoon sugar
1/2 cup all purpose flour
1 teaspoon cinnamon
1/4-1/3 cup finely chopped pecans (optional)
Muffins
1 cup peeled and diced Granny Smith apples (about 1 large or 2 small apples)
1 tsp lemon juice
1/2 cup granulated sugar
1 1/2 cups all purpose flour
2 teaspoon baking powder
2 teaspoon cinnamon
1/2 teaspoon salt
2 large eggs
1 cup unsweetened applesauce
1/2 cup unsalted butter, melted
1 tsp vanilla extract
Combine all ingredients of streusel topping in a bowl. Mix together until combined. Place in the fridge to help the mixture to set up and be a little more firm.
For the muffins, line a muffin tin with 12 liners. Preheat oven to 375.
Toss the diced apples with the lemon juice and set aside.
In a large bowl combine sugar, flour, baking powder, cinnamon and salt. Whisk to combine. In another bowl, combine remaining ingredients. Whisk to combine. Pour the wet ingredients into the dry ingredients. Stir together until just barely combined. Stir in apples.
Pour batter into prepared muffin tin. Each cup should be about 3/4 of the way full. Take the streusel topping mixture out of the fridge. You may need to break up the mixture with your hands. Sprinkle the streusel topping over the muffins. Bake the muffins for 18-20 minutes or until a toothpick placed in the center comes out clean. Remove from pan and let cool slightly. You can eat them warm, but the muffins will come out of the wrappers better if they cool a little bit.
