Asian Beef Bowls

The weather is definitely starting to turn colder around here. The forecast is predicting snow this week. I wake up cold in the mornings now. It's time for me to add more blankets to my bed.

As I type this, the rain is falling pretty steadily outside and it's 48 degrees. Days like this call for cozy dinners. These Asian Beef Bowls are pretty quick to make, filling to eat, and delicious!

Our friend introduced this recipe to us last year when we went over for dinner and games. Since then we've made it and changed it up a few times. We've settled on this version for what we like best. A lot of recipes for beef bowls don't add the veggies. It definitely would work to make it with out them, but I like that it's a one bowl meal.

I'm sure we will be making this again soon! It's delicious, easy and quick to make, and filling. It's a perfect cozy fall dinner. Bring on the delicious fall meals!

Asian Beef Bowls

2 pounds lean ground beef

3/4 teaspoon baking soda

6 tablespoons hoisin sauce

3 tablespoons soy sauce

1 tablespoon tomato paste

1 teaspoon sesame oil

1 teaspoon sugar

1/2 teaspoon red pepper flakes

2-3 cups vegetables: carrots, bell peppers, broccoli, bamboo shoots, bok choy, cauliflower, etc...

2 tablespoons vegetable oil

4 cloves garlic, chopped

2 tablespoons chopped fresh ginger

4 green onions sliced, light & dark parts separated

1/2 cup cashews

1 tablespoons sesame seeds

Combine beef and baking soda in a large bowl. I think it's easier to mix together with your hands so that it's fully mixed in. Set aside for 20 minutes.

In another bowl, whisk together hoisin sauce, soy sauce, tomato paste, sesame oil, sugar, and red pepper flakes. Set aside.

Add 1 tablespoon of oil to a frying pan and heat over medium high heat. Add vegetables to the pan. Sauté and cook just starting to soften. Remove from heat and set aside

After the 20 minutes is over, heat the oil in a large frying pan over medium high heat. Add the beef to the pan and cook until just starting to brown. Add garlic, ginger and the light parts of the green onions. If you need to drain the fat, do so now. Sauté another 2-3 minutes.

Add the set aside sauce mixture to the pan. Continue to cook, stirring the mixture, until beef is fully cooked through. Remove from heat and stir in the green part of the onions. Stir in cashews and sesame seeds. Serve over rice.
