When I first moved into my current place, I think I made banana bread every week for about 3 weeks. I kept buying bananas and then forgetting to eat them before they went brown. It got to the point that my roommate's brother thought that was just what I did every week, so he brought over his brown bananas too.
Well, I don't make banana bread every week. But when I have bananas that are starting to turn, this is my go to recipe for banana bread. I think it has a great flavor, a nice crust and is pretty quick and easy to throw together.
I know this blog is all about my kitchen adventures trying new things, but I figure reliable recipes I use all the time should also find a home here too. I've tried a lot of banana bread recipes, and for me, this one really is the very best!
1 cup sugar
1 cup (or 2 medium) ripe bananas
½ cup butter
2 eggs
1 ½ cup flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped nuts (optional)
Heat oven to 350°, grease and flour the bottom of loaf pan. Blend first four ingredients, beat two minutes at medium speed. Add dry ingredients. Beat two more minutes at medium speed. Stir in nuts if using. Pour into prepared pan, bake 50-60 minutes until toothpick is clean. Cool ten minutes before removing from pan. Makes one loaf.
