Beef and Broccoli

Deliciously soft beef stir fried with lots of vegetables. So, so yummy. An easy week night dinner.
Beef and Broccoli

This weekend my roommate is graduating with her masters. That's a pretty big thing. So we decided to celebrate. We thought of going out, but since we all like to cook, we made dinner at home instead.


Since we were celebrating my roommate, we let her pick the dinner. She choose beef and broccoli. I'm glad she did, because this was so delicious.


Because my roommate can't have gluten, we couldn't use oyster sauce which is usually used for beef and broccoli. So we looked at a number of recipes and kind of mashed them together. Most of the recipes I found for beef and broccoli are pretty similar, but we made adaptions for gluten free. Gratefully, I don't think we lost out on flavor!


You can probably use a different cut of meat for this. I saw a lot of different cuts suggested in other beef and broccoli recipes, but saw flank steak suggested a number of times. I think it really was a good choice. The meat was soft, had a great flavor and wasn't at all tough. I will definitely make this again.

Beef and Broccoli

Marinade:

1/4 cup water

1/4 cup soy sauce

3 cloves garlic, minced

1/8 teaspoon ground pepper

1 lb. flank steak, sliced into 1/8 to 1/4 inch strips


Sauce:

1 cup cold water or beef broth

1/4 cup soy sauce

3 tablespoon brown sugar

1 1/2 teaspoons ground ginger

1 1/2 teaspoons sesame oil

3 tablespoons cornstarch


2 tablespoons oil

4 cups broccoli florets

1/3 cup onion, chopped

1 red bell pepper, chopped

1/2 cup carrots, thinly sliced

1-2 teaspoons toasted sesame seeds (optional)


Whisk the ingredients for the marinade. Pour over the meat and stir. Let marinate for about 30 minutes.


Whisk together the ingredients for the sauce. Set aside until ready to use.


Heat oil in a large frying pan over medium high heat. Add meat to pan in a single layer. If it doesn't all fit, work in batches. Let cook for a minute or so, and then stir meat occasionally until the meat is no longer pink.


Add the onion, peppers, and carrots and let cook 2-3 minutes. Add the broccoli and let cook another 3 minutes. If the pan gets dry, add a little water, a couple of tablespoons at a time so that the stir fry doesn't burn.


Stir the sauce. Slowly add to the pan and stir everything together. Continue cooking on medium until sauce thickens, about 2-3 minutes. Stir in sesame seeds if using. Serve with rice.
