It's been a bit since I last posted. My sister got married. I've been sick. And I was trying to finish up things for school. All this meant that time for doing things I would normally do were set aside and I was just doing the basics in order to keep up with life. Fortunately, I think things are getting a little more calm for at least a few weeks.


My roommate made stuffed peppers this weekend which lead to us having leftover ground pork. Last night when we got home from the gym and looked in the fridge we saw the leftover pork. We settled on making biscuits and gravy for dinner. I was amazed at how much I really enjoyed it. I always like biscuits, but last night I could not get enough of them.


This is the recipe my mom makes. It's pretty easy to throw together. I always enjoy them so much, whether they are covered in gravy or jam. They are the just the right base for whatever you are enjoying with them.


3 cup flour

1/3 cup butter (or shortening)

1 tablespoon baking powder

3/4 teaspoon salt

about 1 cup milk (or cream for a richer biscuit, I like to use half milk, half cream)


Combine flour, baking powder, and salt in a bowl. Cut in butter or shortening until small clumps form. Add milk or cream. Stir to combine. Roll out to about 3/4 to 1 inch thickness and cut rounds. Bake on an ungreased pan at 450 for 10-12 minutes or until lightly browned.
