Blackberry Cobbler

A perfect taste of summer, this blackberry cobbler takes little effort to put together, but makes a delicious way to end a summer meal. The best way to take advantage of summer berries!
Blackberry Cobbler

Growing up in Oregon, blackberries were everywhere. I mean everywhere. They grow like crazy and crop up pretty much anywhere there is dirt. And where there is concrete, they will still try to pop up in the cracks. We spent summers picking blackberries, making jam, cobblers, and other treats. I never realized how amazing that was until I became an adult and move out of the state.


Blackberry plants struggle to grow well where I live. I go to the store and see them on "sale" for $2-3 for 6 ounces. And when I do cough up the money they never match up to the ones we had growing up. They are small and a bit flavorless by comparison. So when I was in Oregon this summer, I picked up all the berries I could. Most of the blackberries weren't ripe yet, but I did get marionberries, raspberries, and boysenberries.


I think blackberry cobbler is one of my most favorite summertime treats. Especially with a good vanilla ice cream. This is the recipe I grew up with my mom making. It was always so delicious. And it works with most any berry. So when I needed to make a dessert last week, I pulled out those marionberries and boysenberries and made this cobbler. So, so good. This is definitely one I will keep making.


Berry Mixture

5+ cups blackberries or other type of berry

1/2 cup sugar

1/4 cup flour

1/4 teaspoon cinnamon


Topping

1/2 tablespoons baking powder

2 tablespoons butter

1 cup flour

1/4 cup sugar

1/4 tsp salt

1/2 tablespoons baking powder

1 egg

1/2 cup milk


Combine blackberries, sugar, flour and cinnamon in large bowl. Stir to combine. Pour into 9x9 baking dish


For the topping, combine butter, flour, sugar, salt and baking soda in bowl until mixture forms coarse crumbs. Add egg. Add enough milk so mixture resembles cake batter. Pour batter over berries and bake at 425 for 20-25 min. Drop temperature to 375, and bake another 20 min or until berries are bubbling. Serve warm!
