A quick, warm, cozy breakfast, perfect for winter mornings, this breakfast rice pudding is a delicious change to the start of your day!
Growing up, my mom would make breakfast for us every morning before school. Looking back on it now I realize how amazing that is. She could have easily handed us a gallon of milk, some cereal, and a bowl. But she made Muffins, pancakes, French toast, oatmeal, eggs, applesauce, biscuits, scones to name just some of things. And it was always from scratch. Pretty amazing when you think about trying to get four kids out the door at different times for school before you head off to work yourself.
Often, when we had leftover rice from the night before, my mom would make this breakfast rice pudding. It's not quite as rich as a lot of rice puddings, making it better for breakfast. When I was home for Christmas this year, we made it again. I had forgotten how much I like it.
I think this is a great breakfast for these winter months. It's warm, cozy and delicious. It's really easy to throw together and it can cook in the microwave while you're getting ready. Next time you make rice, make a little extra and make this for breakfast the next day!
2 eggs
1 cup milk
1 cup sugar
1 teaspoon vanilla
1/8 teaspoon nutmeg
4 cups cooked rice
Beat eggs. Add milk, sugar, vanilla and nutmeg. Blend together. Pour over rice in a microwave safe bowl. Stir together. Microwave for 10-12 minutes until just set.
