Buffalo Chip Cookies

Soft, chewy, chocolaty goodness! Full of chocolate deliciousness, these cookies are delicious! White chocolate chips encased in a rich chocolate cookie.
Buffalo Chip Cookies

When I was about 8 or 9 years old, my family took a trip to Utah. We stopped in and saw my cousin, Sylvia. As a kid, I was not invested in being there for what to me at the time seemed like hours and hours of adults chatting. Now that I’m an adult and can see things from a different perspective, I would probably guess that we were only there for an hour or two. I also don’t remember anything from the conversation while we were there, but I do remember the cookies that my cousin made.


They were soft, chocolaty, and delicious. She called them buffalo chip cookies. Because they look like buffalo chips. But I’m sure they taste soooo much better!


She put white chocolate chips in them, but I often swap out the white chocolate for mint chips. I really like the mint with the soft chocolate cookies. But I do like the white chocolate chips in them too. Really, whatever you decide to use for chips will be great.


I made these this past week for a barbecue I went to. They are quick and easy to make, and every time I make them they seem to disappear quickly. They are definitely a recipe I go back to again and again.

1 cup butter

2/3 cup brown sugar

3/4 cup sugar

2 eggs

1 teaspoon vanilla

1 teaspoon soda

½ teaspoon salt

2/3 cup cocoa

2 ¼ cup flour

2 cup white or mint flavored chips


Cream together butter and sugars. Add eggs and vanilla. Add soda, salt, cocoa, and flour. Mix until everything is combined. Fold in baking chips


Bake at 375° for 8-10 minutes. Leave on baking sheet for 2 minutes after removing from oven, then move to a cooling rack to cool.
