A quick, easy, slow cooker dinner. Easy and delicious, yet healthy and satisfying.
Last week was kind of a crazy week, so I needed to figure out something for dinner that would be quick to make, yet delicious. I was trying to figure out something for dinner that would be relatively easy to throw together, but still delicious. I definitely didn't want to be spending a ton of time in the kitchen.
I came across this recipe for chicken burrito bowls and decided I would it. I've been trying to learn how to use a slow cooker a little more, and this recipe looked pretty good. I adapted it a bit for me, but I think overall it turned out really good. I think I will definitely make this again.

3-4 boneless skinless chicken breasts
1 packet taco seasoning
14.5 ounce can diced tomatoes
16 ounce jar salsa
1/2 cup chopped onion
2 cups corn
15 ounce can black beans, drained and rinsed
1 1/2 cups cooked brown rice
Optional toppings: shredded cheese, diced green onions, cilantro, sour cream, diced avocado, fresh tomatoes, tortilla chips, salsa, shredded lettuce
Combine the chicken, taco seasoning, tomatoes, salsa and onions in slow cooker. Make sure the chicken is covered with liquid. You can add a little water if needed. Cover and cook on the low for about 5 hours.
Stir in the beans and corn. Cover and continue cooking on low for 3 to 4 hours more. Shred the chicken using two forks. Stir in the cooked rice. Serve with desired toppings.
