A quick, easy, delicious dessert to feed a crowd. Easy to make, and still delicious!
My parents have been in town this past week for a family reunion. My grandma's family on my mom side does a reunion every couple of years. This time it was only a couple of hours away from where I live.
On Sunday after the reunion, we had dinner at my sister's house. She asked me to bring dessert. I also wanted to take something to my neighbors. However, after a week of running around with family, late nights, and early mornings, I just wanted to make something easy.
My dad really loves chocolate chip cookies, so a big pan of cookies seemed like the best option. After a quick search, I decided on this one from sixsistersstuff.com. I used a few less chocolate chips and adjusted a couple other things, but overall this recipe was the perfect fit for what I was looking for. Quick, easy, ingredients already in my pantry. I definitely recommend this recipe.
1 cup butter
1 1/4 cups brown sugar
3/4 cup sugar
1 Tablespoon vanilla extract
2 eggs
2 3/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups semisweet chocolate chips, divided
Preheat oven to 350 degrees F. Cream butter, brown sugar and sugar in the bowl of a stand mixer. Add vanilla and eggs. Mix to combine. Slowly stir in flour, baking soda and salt. Stir in 1 1/4 cups chocolate chips.
Spray a 18" x 13" sheet pan with nonstick cooking spray and spread cookie dough out evenly in pan. It help to have wet hands to spread the dough out. Sprinkle remaining 1/4 cup chocolate chips on top.
Bake for 20-25 minutes or until middle is set up and edges are golden brown.
Let cool and cut into squares.
