Cilantro Lime Rice

A perfect side dish to almost any Mexican dish, this rice is easy to make, simple, and delicious.

You know those meals that are simple, easy, but still amazingly delicious? This rice fits that bill. It's great in burritos, salads, nachos, bowls, or even as just a side. Plus its super easy to make.


This rice would be delicious with beans, veggies, some salsa and some guacamole. Or as a side for tacos or enchiladas. And you can freeze it for later use. This is a really versatile recipe and you can use it in so many ways!

Cilantro Lime Rice

2 cups rice (I used long grain brown rice, but you can use whatever)

4 cups water

2 tablespoons unsalted butter

2 teaspoons chicken bouillon

1 clove garlic, minced

1/4 cup cilantro chopped

1 teaspoon lime juice

1 4 ounce can dice green chilies


Combine everything together in a rice cooker and cook according to rice cooker instructions.


Alternatively, combine everything in a pot. Bring to a boil. Reduce to a simmer and cover. Cook for 20-25 minutes or until rice is cooked and tender. Remove from heat and serve.
