Coconut Chia Pudding

Smooth and creamy, yet healthy and delicious. Topped with some fruit, nuts, or even a little chocolate, this chia pudding is perfect for breakfast, a snack, or dessert!

Did you ever see those commercials for chia pets? Growing up in the 90’s there were a few commercials that stayed with me, and the one for chia pets definitely was one of them. Chia pets are actually grown from chia seeds.


Well, as cool as chia pets are, I prefer to eat my chia seeds. Did you know that two tablespoons of chia seeds has 10 grams of fiber in it? If you’ve never had chia seeds before, you should know they need to soak for at least 5 minutes in liquid before eating. They take on at least 10 times their weight in liquid. Soaking them allows your body to digest them much easier.

Anyway, this pudding is really delicious. This recipe is really simple, but it’s also really delicious. The chia seeds give the pudding a little texture, but it’s also thick and creamy. It makes a great breakfast, snack or dessert. It’s really is delicious!


1 cup canned coconut milk

1 cup almond milk

2 tablespoons honey

2 teaspoons vanilla extract

1/4 teaspoon salt

1/3 cup chia seeds

Possible toppings: bananas, raspberries strawberries, almonds, pistachios, pecans, chocolate, peanut butter, almond butter, etc.


Combine coconut milk, almond milk, honey, vanilla and salt in a medium bowl. Stir in chia seeds, making sure that everything is fully mixed. Cover and refrigerate for at least 2 hours, or overnight. Remove from fridge, serve in individual bowls and top with desired toppings. You can also pre-portion each serving of the pudding before placing in the fridge.
