Dishpan Cookies

Crispy on the outside, and chewy in the middle, these cookies make a great every day cookie! Quick to throw together, and delicious to eat!

I spoke at stake conference on Sunday. You know those things that you get anxious about before they happen, and then they happen and then you still have anxiety about it? That was my experience. I think it went fine. A few people messaged and told me it went well, but I'm not 100% positive that it did. I think those kinds of things are trickier during a pandemic. I didn't actually talk to anyone at the stake center because of social distancing, so it's even trickier to know how it went. I think I feel good about what I said; I'm just not sure how it was received. Sigh.


Well however it went, I'm glad it's behind me. I think those kinds of things are stressful, but probably good for me. I don't love being up in front of people, talking about things I feel vulnerable about. But I do think it stretches me in ways that are good.


About a year ago we started freezing cookie dough so we would have it on hand when we wanted it. The other advantage is we don't have to eat it or give it all away in a couple of days. Warm cookies on demand? Yes, please.


I made this cookie dough about a month ago, and I'm glad I did. Sometimes I just need a cookie when I'm feeling all the anxious feelings, like when I'm preparing for a talk. We grew up with these cookies, so there is definitely some nostalgia with them. The cookies are crisp around the edges, and chewy in the middle. The dough is really delicious. The addition of both the oatmeal and the Wheaties give the dough and the cookies a really good texture. These make a great everyday cookie when you need one.


The recipe makes a fair amount of cookies, so I often cut the recipe in half. If you decide to freeze the dough, divide the dough into cookie portions on a cookie sheet and freeze. Once frozen, store in a freezer Ziplock bag for up to 2 months. When ready to bake, remove from freezer and let sit at room temperature for 15 minutes before baking.


Dishpan Cookies

2 cups white sugar

2 cups brown sugar

2 cups butter

1 tablespoon vanilla

4 eggs

½ cup water

4 cup flour

1 tablespoon baking powder

1 tablespoon baking soda

1 teaspoon salt

4 cup old fashioned oatmeal

4 cups Wheaties

2 cups walnuts (I used pecans this time and it was great!)

12 oz chocolate chips


Mix together sugars and butter. Don't totally cream them. Add eggs, vanilla and water. Mix until incorporated. Add everything else except nuts and chocolate chips. mix until just combined. Add nuts and chocolate chips. pulse until they are mixed in. Cookies may be cooked as soon as mixed, but are better if dough sits an hour or so. Drop on greased baking sheet. Bake at 350 for 10-15 minutes.
