Easy Key Lime Pie

Incredibly and quick to make, this pie makes a deliciously fluffy lime flavored treat! The perfect dessert for hot summer nights!
Easy Key Lime Pie

After so much time at home, we have decided to try to be a little healthier. Not massively. Just making small changes that will hopefully have a good, lasting effect on our overall health. Upping our veggie intake. Increasing our water consumption. And decreasing our dessert intake.


I think a part of me always feels a little sad when I realize just how much I like to make foods that are not as good for my body. Normally I can still make treats whenever I want and find people to share them with, but currently that's a little trickier. So this week we made this pie. It's meant to stay in the freezer, putting less pressure on us to eat it quickly. Plus it's easy to make, tastes delicious, and is cooling in the summer heat.


Graham cracker crust

1 1/2 cups graham cracker crumbs (I blitzed my graham crackers in my food processor)

1/4 cup butter, melted

3 tablespoons sugar


Combine all ingredients in a bowl. Mix together until combined. Press mixture into the bottom and sides of a pie dish. Bake at 350 for 4-5 minutes or until crust just begins to brown. Cool completely.


Filling

3 1/2 cups frozen whipped topping, thawed

1 14 oz sweetened condensed milk

1/2 key lime juice


Mix lime juice and sweetened condensed milk together in a bowl. Fold in whipped topping. Spread filling into cooled pie crust.


If eating soon, refrigerate for at least one hour. If serving later, store in the freezer. Let sit at room temperature for 15 minutes before serving.
