Fresh Tomato Sauce

A simple, but delicious sauce, perfect with pasta. Add whatever seasonings you would like to change it up. Fresh tomatoes and roasted garlic really up the flavor of this sauce.
Fresh Tomato Sauce

The tomatoes we picked a couple of weeks ago have been sitting on our counter gradually turning from green to shades of red. We had accumulated a pretty large bowl, so I was feeling the pressure to do something with them. However, I didn't need more food sitting in my fridge waiting for me to eat it. So I made a red sauce and froze it.


I really like having things like tomato sauce on hand that I can pull out a moments notice. I froze the sauce in freezer zip top bags in two cup increments, but you can do what you want with it. It's a pretty simple sauce to make, but I think it still is pretty delicious.


10-15 tomatoes

1-2 tablespoon olive oil

1 small onion, chopped

3-4 cloves of garlic, roasted

1 tablespoon oregano

1 tablespoon basil


Heat olive oil in a large pan. Add chopped onions. Cook until the onions are softened.


Remove the stems from the tomatoes and cut into quarters. Place the tomatoes in the food processor, Add onions and garlic. Process until smooth. This may need to happen in multiple shifts. Add tomato sauce to the pan you cooked the onions in. Add the oregano and the basil. Heat over medium high, stirring together everything. Let simmer for 20-25, stirring occasionally. Let cook until at the desired consistency.
