Cozy and comforting, this soup is perfect for a cold winters day. It's simple and easy to make, but definitely delicious! This chicken and homemade noodles soup is just so cozy and comforting!
We woke up to snow covering the ground and falling from the sky. I love the snow so I went out for a walk in it this afternoon. Snow makes everything so pretty! Coming in from the cold outside, there is nothing better than a warm bowl of soup.
This recipe was the one my mom made growing up, and I think her mom made it too. My mom had two older brothers and lived on a farm so my grandma was always cooking for a hungry crowd. She would make this soup and a big pot of mashed potatoes to spoon it over. When I was a teenager we would take dinner to my grandpa every night. I think it took him a while to get used to eating it without the potatoes. Fortunately this soup is plenty filling and delicious all on it's own.
For the most part I tend to make this with the homemade noodles, but you can also use a store bought egg noodles. You can also just use chicken breasts instead of a whole chicken, but you may need to add a little extra bouillon to the soup to help with the flavor.
Soup
Whole chicken
2-3 stalks of celery, chopped
½ onion, diced
3-4 carrots, sliced
1 tablespoon salt
1-2 cubes chicken bouillon (optional)
1 1/2 tablespoons dried parsley
water
Place chicken in a large pot and add water, making sure to cover the chicken. Add remaining ingredients. Bring to a boil. Reduce heat. Cook over medium heat for 1½ hours or until chicken is cooked.
Remove chicken from pot and de-bone Add chicken back to broth. Boil for 20 minutes and prepare noodles.
Noodles:
3-4 eggs
4-5 cups flour
1 teaspoon salt
In a medium bowl, beat eggs. Add salt. Add flour a little at a time until you have a very stiff dough. Roll out dough very thin (thin as possible) on lightly floured surface. Slice into ½ inch strips. Add to chicken broth. Cook 20 minutes or until noodles are cooked.
