Fresh, Healthy and Yummy! Citrus and salmon pair up to make a great dinner. This dinner will leave you feeling good and satisfied!
A few weeks ago my roommate came home carrying a large bag of oranges. The next day, she left for a week in Canada, followed by another 3+ weeks in Europe. Before she left, she told my other roommate and I that she was leaving them for us.
Fast forward 2.5 weeks later, and I was standing in the kitchen when I saw the pile of oranges and realized I needed to do something with them. Fortunately we had bought salmon that morning for dinner. I did some googling and then tried a mashup of a lot of recipes. Fortunately, it definitely turned out well!
4 individual salmon portions (about 6 ounces each)
1/3 cup honey
1/2 tablespoon ground ginger 2 cloves minced garlic
zest of 1 orange
2 tablespoons fresh orange juice
salt and pepper
Preheat oven to 400 degrees. Line large baking sheet with foil. Place salmon fillets on foil, leaving an inch or two between each. Salt and pepper the salmon.
Combine honey, ginger, garlic, orange zest and orange juice in a small bowl. Pour over the salmon. Bake 15-20 minutes or until salmon reaches 145 degrees.
