Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies

Today was a hard day. I felt my heart breaking many times over. I woke up to news that just made me ache for people I love who would be most affected. It was the kind of day where your mind is somewhere else no matter what you’re doing, and no matter how hard you try, your focus is never fully where it ought to be because all you can think about is the hard thing. I must have started crying at least a dozen times. Days like today I am eternally grateful for a friend who will sit close to me, hold my hand, and remind me that it will be okay even if I don’t know how that can be right now. And for the reminder that there is hope in every situation.

Last night I made a batch of these cookies. They are so delicious. Gooey and soft in the middle, with just a little crunch in outside. And they are just the right flavor. On a day like today, when my desire to eat is gone, there is still something comforting about glass of milk and a warm cookie.

1 cup butter, slightly cold and cut into pats. 1/2 cup granulated sugar 1 1/4 cup brown sugar 2 eggs 2 3/4 cups flour 4 tablespoons cornstarch 1 1/2 cups quick oats (can use old fashioned if needed) 1 teaspoon baking soda 3/4 teaspoon salt 1/2 teaspoon cinnamon (optional) 2 cups chocolate chips (I used milk chocolate, but you can use whatever)

Line baking sheets with parchment. Place oven rack in the middle of oven. Preheat oven to 425 degrees.

Add butter to bowl of stand mixer. Using the paddle attachment, mix on medium low to break up butter. Scrape down sides of bowl. Add granulated sugar and brown sugar and beat until butter is no longer in visible chunks. Beat in eggs on medium low.

Add flour, cornstarch, oats, baking soda, salt and cinnamon if using. With the mixer on low, mix until just barely combined. Stir in chocolate chips.

Place cookies onto prepared cookie sheets by 2 tablespoonfuls. The cookies will turn out better if you don’t compact them.

Bake for 5-6 minutes until cookies are just barely set and just starting to turn golden brown. Remove from the oven and let sit for at least 30 minutes to let cookies set.
