Oatmeal Peanut Butter Cookies

A twist on the usual peanut butter cookie, these chew cookies are loaded with Reese's Pieces and chocolate chips. A quick and easy cookie for those moments your sugar cravings kick in!
Oatmeal Peanut Butter Cookies

Whelp, it's been of week and a half of mostly inside time and the walls of our house are starting to feel a little too familiar. One week in and I am already feeling anxious to get out. That's a good sign. I have been put on hiatus for the time being with work, so I have an abundance of time. Fortunately I like my roommate and I can go for walks or runs when I need a break of the indoors. After a week of doing whatever and not feeling productive, I finally decided that I needed to set a schedule for myself everyday. I made a list of things that I want to get done, like crocheting blankets, deep cleaning, books to read, and things to bake. I think it will be a good thing. I made these cookies last week when I was craving something sweet but didn't want to spend a lot of time in the kitchen. The original recipe comes from twopeasandtheirpod.com, though I changed it up based on what I had on hand and how I wanted the cookies to turn out. I really enjoyed them. Somehow adding oatmeal to a cookie makes them feel just a little more healthy. These cookies are a delicious twist on a traditional peanut butter cookie, filled with chocolate and peanut butter goodness. 1 1/2 cups old fashioned oats 3/4 cup all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup unsalted butter, softened 1/2 cup creamy peanut butter 1/2 cup granulated sugar 1/2 cup light brown sugar 1 large egg 1 teaspoon vanilla extract 3/4 cup chocolate chips 1/2 cup Reese’s Pieces 1/2 cup chopped peanut butter cups Preheat oven to 350. Line two large baking sheet with parchment paper. Set aside.

Combine dry ingredients in a medium bowl. Set aside. Cream butter, peanut butter, and sugars together until creamy and smooth, scraping sides as needed. Add egg and vanilla and beat until combined. With the mixer on low, add dry ingredients and mix until just combined. Stir in chocolate chips, Reese's Pieces, and chopped peanut butter cups. Drop cookies onto baking sheet, about 2 tablespoons of dough per cookie, about 2 inches apart. Bake 10-12 minutes, or until the cookies are lightly browned around the edges, but still soft in the middle. Remove cookies from oven. Cool on the baking sheet for about 5 minutes. Transfer cookies to a wire rack and cool completely.
