Some days are just brownie days. Days when you just need a little chocolate to make life a little happier and a little sweeter.
About 10 years ago my roommate Heather made these brownies and I've been making them as my go-to brownies ever since. They are the right balance of fudgy and cakey. As someone that doesn't always love chocolaty things, these brownies are still just the right amount of chocolate. Rich, but not too rich. Plus, they are one pan brownies, meaning you aren't going to be making a mess out of your kitchen. And if you don't eat them all in one day, they stay fresh for days.
Adding the fudge icing is completely optional, but if you do, it just amps up the brownies so much more. The frosting adds just another layer of delicious richness. I would definitely try it if you have a bit of a sweet tooth.
I also love these brownies for ice cream sandwiches. Cut a square out of the pan, divide it in half, and put a scoop of ice cream on one half, then put the other half on it. A perfect summer treat!
12 tablespoons cocoa
4 tablespoons vegetable oil
1 cup butter
2 ounces high quality milk choc (about 1/3 cup chocolate chips)
2 cups sugar
4 eggs, well beaten (1 min w/ fork)
1 teaspoon vanilla
1 ½ cup flour
½ teaspoon salt
Combine cocoa and oil to make 4 oz liquid chocolate. Add butter and milk chocolate in medium saucepan and heat until just smooth. Remove from heat. Cool for a couple minutes. Stir in remaining ingredients (in order.) Pour into an ungreased 9x13 pan. Bake 25-30 minutes at 350. Cool and frost or cut into squares and enjoy right away.
Fudge Icing
½ butter
2 tablespoons cocoa
¼ cup milk
3 ½ cups icing sugar
1 teaspoon vanilla
Combine butter, cocoa and milk in pan. Bring to a boil, stirring constantly. Remove from heat. Add powdered sugar and vanilla. Beat until smooth.
