Super easy to make, these shortbread cookies are buttery, slightly sweet, crisp and melt in your mouth! With just a few ingredients, these cookies are an easy and delicious recipe to make!
Orange Shortbread Cookies

My mom gave me a shortbread pan for my birthday a few weeks ago. We finally made it this week. I've never made shortbread on it's own, and I really liked it. Especially this recipe with the added orange zest.

Shortbread cookies are buttery, have a crisp texture and but they dissolve in your mouth into deliciousness. They are just slightly sweet, but not overwhelmingly so. They are a great recipe for the holidays, but really can be enjoyed any time of year. You can also take out the orange zest, try other extracts, add ground up nuts or spices. This is a really versatile recipe.

The dough will keep for about a week in the fridge and a month in the freezer. Just be sure if you are storing it for later use to wrap it tightly. When you are ready to use it, just let the dough warm to a temperature that you can cut it with a knife, but is still cool.

¾ cup butter

½ cup powdered sugar

1 teaspoon vanilla

¼ teaspoon salt

2 teaspoon orange zest

1 ½ cups all-purpose flour

Cream butter for a couple minutes until light and fluffy (about 3 minutes.) Add powdered sugar and beat in. Add the vanilla, orange zest and the salt. Beat again. Add flour and beat a few more minutes until everything is completely combined. Scrape down the edges of the dough, and mix again.

Pour out dough onto parchment paper. Form dough into a disk about 6 inches in diameter. Wrap in parchment and place in fridge for 1 hour.

Remove from fridge and press into a greased shortbread pan, making sure to press into each of the crevices. Make sure your dough is evenly spread out so that it bakes evenly. Dock dough with a fork. Bake for 25-27 minutes.

Remove from oven and let cool for 12 minutes. Place a cutting board on the top of the pan. Flip over and tap the bottom of the pan a few times. While shortbread is still warm, cut into squares. Enjoy!
