Peanut Butter Explosion Cookies

Warm, soft, gooey peanut butter cookies with honey roasted peanuts and chopped up peanut butter cups. So, so good!

I saw a recipe for these peanut butter cookies a few years ago and I knew immediately that I wanted to make them. Peanut butter. Honey roasted peanuts. Peanut butter cups. Yes, please!


Well, fast forward a few years, and I finally got around to making them. I'm glad I did. They are so yummy! I wasn't sure about the honey roasted peanuts initially, but they add a good texture to the cookies.


If you like peanut butter and chocolate, these are the cookies for you.

Peanut Butter Explosion Cookies

2 cups flour

1 teaspoon soda

1/4 teaspoon salt

1/2 cup chunky peanut butter

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/4 cup sugar

1 egg

1 teaspoon vanilla

3 tablespoons milk

1/3 cup semi-sweet chocolate chips

1/3 cup honey roasted peanuts, chopped

14 peanut butter cups, chopped


Preheat oven to 375. In a small bowl, combine four, soda and salt.


In the bowl of your mixer, beat the butter and and peanut butter until smooth and creamy. Add sugars, and beat on medium high another minute until the mixture is light and fluffy, scraping down the sides. Add egg, vanilla and milk. Slowly add the flour mixture with the mixer on medium low. Mix until dough just comes together. Fold in chocolate chips, peanuts and peanut butter cups.


Drop by large teaspoonful on to ungreased baking sheet. Bake about 10 minutes, or until the edges just begin to brown. Let cool 1-2 minutes on cookie sheet before moving to cooling rack.
