Peppermint Popcorn

Updated: May 13, 2021

Pepperminty deliciousness! Crunchy, sweet, and different from the usual. A perfect snack for winter gatherings!

I"m back!

Between a really yucky stomach bug, weddings, and Christmas, this has had to take a back seat for the past few weeks. But life seems to have settled down and I have a few minutes of down time, so I here I am.

We made gingerbread houses a few weeks ago. Well, graham cracker houses. But we made a couple types of popcorn to eat while we were building.

I like this popcorn recipe in particular for winter time because the peppermint feels just right for the season. It's just enough that it doesn't feel overwhelming, but still enough to be the right level of sweetness. And you can always add more or less white chocolate and peppermint depending on your preferences. Plus, it's quick and easy to make.

About 15 cups popped popcorn

12 ounce bag white chocolate chips.

4-5 candy canes, crushed

Line a baking sheet with parchment paper. You can also use wax paper. Set aside.

In a microwave safe bowl, heat the chocolate chips on low for 45 seconds. Take out and stir. Return to the microwave and heat another 20 seconds. Take out and stir. Continue heating for 20 second increments until chocolate chips are completely melted.

Pour white chocolate over the popcorn and quickly stir. Add crushed peppermint and stir in.

Pour popcorn out onto prepared pan. Spread out popcorn. Let popcorn cool. Break into chunks and serve. Enjoy!
