Pumpkin Cheesecake Brownie Bars

A brownie layer, vanilla cheesecake layer, a layer of Oreos, and the pumpkin cheesecake layer, this dessert has a lot going for it. This is a perfect Halloween dessert!
Pumpkin Cheesecake Brownie Bars

My sister really likes cheesecake. Like really likes it. Every year for her birthday she requests cheesecake. Because her birthday is two days before Christmas, so cheesecake on top of everything else that seems to be in abundance at that time of year just feels like a lot. I think that has created a bit of aversion to cheesecakes whenever I see them. They just seem heavy and too rich. But when I saw this recipe, I just wanted to make them. I think they definitely helped to reinstate my liking for cheesecake.


These cheesecake brownie bars are so fun for Halloween with the orange pumpkin layers, blackish brownies, white cheesecake layers, and Oreos. throughout. Between the brownie layers, vanilla cheesecake layer, a layer of Oreos, and the pumpkin cheesecake layer, this dessert has a lot going for it. And it's pretty easy to make. So if you are looking for a great Halloween dessert, this is it!


Brownie base

5 tablespoons unsalted butter

1/3 cup semi-sweet or dark chocolate chips

1/2 cup sugar

1 egg

1 teaspoon vanilla

1/4 teaspoon salt

1/4 cup flour

2 tablespoons cocoa powder


Cheesecake layer

2 8 ounce cream cheese, room temperature

3/4 cup sugar

1/4 teaspoon salt

2 eggs, room temperature

1 1/2 teaspoon vanilla

1/2 cup sour cream

3/4 cup canned pumpkin

2 teaspoon cinnamon

1/4 teaspoon ginger

1/8 teaspoon ground cloves

1/8 teaspoon nutmeg

20-25 Oreos


Preheat oven to 325. Grease an 8x8 baking pan with cooking spray. Line with parchment paper, leaving a little hanging over to help lift the out the bars later.


Microwave butter and chocolate chips together in medium bowl until smooth, taking out and stirring every 15-20 seconds. Let cool for about 5 minutes. Stir in sugar. Stir in the egg, vanilla, and salt. Fold in flour and cocoa powder. Spread brownie batter into the bottom of the pan and set aside while making the cheesecake layers.


Add cream cheese, sugar, and salt to the bowl of stand mixer. Beat together until smooth, making sure to scrape down the edges at least once. Beat in the eggs and vanilla. Stir in the sour cream.


Pour half of the cheesecake batter onto the brownie layer. Layer an even layer of Oreos over the top.


To the remaining cheesecake batter, add pumpkin and spices. Pour over the top of the Oreo layers. Chop up 8 more Oreos and sprinkle on top of pumpkin layer.


Bake cheesecake for 1 hour 15 minutes. Remove from oven and let cool on rack for 1 hour. Transfer to fridge and chill for at least 2 hours, or until bottom of pan is cool. Cut into bars to serve. Remove from pan and parchment if serving later. Keep in fridge if not eating right away.
