Reese's Peanut Butter Brownies

Chocolaty, peanut butter brownies with chocolate frosting, chopped up peanut butter cups and Reese's pieces. Fudgy, peanut butter goodness. Definitely a win!
Reese's Peanut Butter Brownies

I got my stitches out a few days ago. While I'm easing back into eating more solid foods, I definitely was ready for a treat that wasn't pudding or pudding in texture. So when my roommate mentioned that a neighbor was stressed out and needed chocolate, I thought of brownies. Still soft, but would give me some texture that I have definitely been missing!


This surgery was definitely way worse the the first one. I am sure that part of it is that it was at the front of my mouth. When the swelling came, it pushed on my sinuses and up into my eye. It was pretty awful. I couldn't laugh, smile, or even talk without it hurting. I was so grateful that it started going down after a few days.


My mouth is still a bit on the sore side, but it's definitely gotten better in the past few days. The bruising has dissipated and it feels better than it did. As much as I would love to eat things with more texture, I'm still easing into solid foods. Eventually.


These brownies are a great transitioning food. Still soft, but with a bit more texture. Without the frosting the brownies are delicious. These aren't your basic brownie. They have peanut butter mixed in, making them that much better. My house smelled so good while these were baking. Add the frosting and candy on top and you have yourself a pretty amazing brownie! Just one bite and even my crazy sweet tooth was satisfied. This definitely met the need our neighbor had for chocolate! This recipe will be making a reappearance in my kitchen again for sure!

Reese's Peanut Butter Brownies

Brownies:

1/2 cup butter, melted

1/4 teaspoon salt

5 tablespoons cocoa

2 1/2 teaspoons vanilla

1 cup sugar

2 eggs

1 cup flour

1/2 cup peanut butter


Frosting:

2 tablespoons butter, softened

3 tablespoons heavy cream

2 ounces cream cheese, softened

2 1/2 tablespoons cocoa

2-2 1/2 cups powdered sugar


Topping:

4 regular sized Reese's peanut butter cups

1/2 cup Reese's Pieces


Preheat oven to 350 degrees. Grease 8 x 8 or 9 x9 pan.


Whisk together the melted butter, salt, cocoa, and vanilla in a medium bowl. Whisk in sugar and eggs, stirring until smooth. Add flour and peanut butter. Stir until everything is mixed in and and there are no streaks of flour or peanut butter.


Pour the batter into the prepared pan. Bake for 17-20 minutes, or until toothpick comes out mostly clean. Let cool for at least a half an hour before frosting.


For the frosting, beat butter, cream, and cream cheese until smooth. Scrape down bowl, and beat again, making sure everything is smooth. Beat in cocoa powder. Add powdered sugar, adding a half a cup at a time and mixing it in thoroughly before adding more. Depending on how thick you want your frosting, you can decide how much powdered sugar you add. I used 2 1/4 cups.


Spread frosting over brownies. Sprinkle with chopped peanut butter cups and Reese's pieces. Cut into squares and enjoy!
