A deliciously gooey cookie with graham cracker, marshmallow, and chocolate folded in. A perfect way to celebrate National S'mores Day, no campfire needed!

Here in Utah, the smoke has traveled from the wild fires in west and is so thick you can hardly see the mountains that surround us. Yesterday's run definitely left a bit of a cough in my lungs the rest of the morning. Building a bon fire to make s'mores seems like a bad idea. But these cookies? Definitely a good idea!
I avoided making s'mores cookies for a long time. I would see recipes for them and wonder why they were a thing. I like s'mores. I definitely like cookies. But for some reason combining the two seemed weird to me. I finally tried them, and boy was I wrong. These cookies are seriously delicious!
This cookie is made using Golden Grahams cereal, which I think gives it a little crunch in an otherwise soft and gooey cookie. If you want the graham flavor without the crunch, I recommend using chopped up graham crackers which will soften more than the cereal. The marshmallows, chocolate chips, and chocolate on top all contribute to the gooey consistency.
Because this cookie gets pulled out of the oven and put back in a couple of times, it's important to remember not to over cook it in the first stage. You want the cookie to be soft, and not over cooking it is important.
The base of this cookie is a delicious chocolate chip cookie. Add marshmallows, graham crackers, chocolate chips in the dough and little more chocolate on top. These cookies are amazing!

1 cup unsalted butter
1/2 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 3/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cups chocolate chips (I use milk, but you can use whatever)
1 1/4 cup Golden Grahams cereal or 1 1/4 cup graham crackers chopped up
1 1/2 cups mini marshmallows
9-12 large marshmallows cut in half
2-3 Hershey bars
Preheat oven to 375. Line 2-3 baking sheets with parchment and set aside.
Combine butter, brown sugar and granulated sugar in a bowl and cream together. Blend in eggs and vanilla and beat until smooth.
Add the flour, baking soda, salt. Mix together until mixture just starts to come together. Add chocolate chips, Golden Grahams and marshmallows. Fold together until everything is evenly distributed and dough is mixed together.
Shape dough into balls about the size of golf balls. I ended up with about 20 cookies from the dough. Place on baking sheet with no more than 8 per sheet. Bake for 6-8 minutes.
Remove cookies from oven and place marshmallow half on each cookie. Place back in oven and bake for another 2-3 minutes.
Remove from oven and slightly flatten marshmallow. I used a the back of a spoon for this. Place 1 rectangle of the Hershey chocolate bar on top of the marshmallow. Bake for 1 more minute. Remove from oven and let cool slightly. Enjoy!
