A cozy, delicious soup, full of veggies, sausage and tortellini. So filling and delicious. A hardy and comforting soup for to warm you on cold winter days.

Sausage Tortellini Soup

A few years ago my mom made this soup when I was home for the holidays. After a day of flying, too much time in the airport, and weird eating, this soup was just what I needed. It was yummy, filling and comforting all in one dish.

Every time I make this soup for someone or for some event, it disappears. It seems to please everyone. Picky eaters and non-picky eaters all seem to enjoy it. I come home from potlucks with an empty pot. Everyone seems to like this soup. On cold winter days, it's warm, hardy, and satisfying. We made this soup again this week and I was reminded again of how much I really love it. I’ve always love tortellini. Combined with sausage, tomatoes, and so many veggies, this is a perfect winter meal. *adapted from ourbestbites.com

1 lb ground sausage 3 cloves garlic, minced 1 small onion, diced ½ cup water 2 15-oz. cans chicken broth ½ c. apple cider or juice 1 16-oz. can diced tomatoes 1 8 oz. can tomato sauce 3-4 sliced carrots 1 1/2 teaspoon dried basil 1 teaspoon dried oregano 3 medium zucchini, grated 8–10 oz. package cheese tortellini 2 tablespoons dried parsley Crumble sausage into the bottom of soup pot. Heat on medium high heat. Add onion and garlic. While stirring, continue to heat until sausage is completely cooked and onions are translucent.

Add remaining ingredients except zucchini, tortellini and parsley. Stir to combine. Bring soup to a simmer. Cover and cook for 30 minutes. Add zucchini and parsley. Simmer another 15 minutes. Add tortellini. Soup is done when tortellini is cooked.
