Quick, no bake bars with only 6 ingredients and still so, so delicious! Crispy, peanut butter, chocolaty goodness in just a few minutes!
When I was around 14 years old, I spent New Years Eve with my sister and her friends. We went to a few of their houses, and finally ended up at the house of some family friends I had known since I was really little. They had a few other families over and were just playing games and eating snacks.
I remember the mom saying something about needing something sweet to put out. We were at hanging out in the kitchen at the time, and I was shocked when she put a plate of homemade dessert so quickly. I had never had scotcheroos before. But one bite, and I was hooked.
Occasionally when I want something quick, but still delicious, I make a batch of these. The nice thing is that they require no baking and they can easily be made gluten free. The recipe for these is all over the internet with a variety of variations. This is the recipe I make.
1 cup peanut butter
1 cup sugar
1 cup corn syrup
6 cups crispy rice cereal
1 cup semisweet chocolate chips
1 cup butterscotch chips
Combine peanut butter, sugar, corn syrup in a sauce pan. Stir over medium heat until sugar is dissolved and mixture is smooth. Pour over the crispy rice cereal and stir to combine. Press into a greased 13x9 pan.
Combine chocolate chips and butterscotch chips in a microwave safe bowl. Heat for 30 seconds. Take out and stir. Return to microwave and heat another 15 seconds. Take out and stir. If chips are not melted, repeat the process, heating for 15 seconds at a time and stirring until chips are completely melted and mixture is smooth.
Spread chocolate mixture over cereal mixture. Refrigerate about 10 minutes until chocolate is set. Cut into bars and serve.
