Shepherds Pie

Versatile, delicious and easy to make for a weeknight dinner, this shepherds pie is definitely one of my favorite recipes. The perfect winter comfort food dinner!
Shepherds Pie

I think shepherds pie is one of my most favorite winter comfort food dinners. If you haven't ever had it, it's basically a casserole with a meat and veggie mixture on the bottom, and mashed potatoes on the top. I think shepherds pie is originally from England and is made using lamb or mutton. Growing up on a dairy farm meant that we always had a stock of beef in our freezer, so we would make it with ground beef.


I've seen a lot of recipes that use a variety of veggies, and really you can use whatever you want in the mix on the bottom. I've also made versions with lentils instead of beef, homemade tomato sauce, or sweet potatoes on the top instead of using russet potatoes. This is the recipe I grew up with. I like it because it's relatively easy to prepare, making it a good recipe to make any night of the week. It's also delicious! And it makes for pretty decent leftovers too!


This really is one of my go to winter comfort food dinners. I love that it's a really flexible recipe. You really can sub in fresh veggies and change up the whatever you want to make it your own. And it's a relatively easy recipe to put together for a weeknight. It's definitely worth trying!


1 pound ground beef

1/4 cup chopped onion

1 10 3/4 ounce can of tomato soup

1 cup green beans (I just use one can cut green beans)

1 6 ounce can of mushrooms (optional)

3-5 potatoes

1-2 cups cheddar cheese, grated

salt and pepper to taste.


Cook and mash potatoes (mash with milk, butter, etc. as you would for regular mashed potatoes.)


While potatoes are cooking, brown hamburger and onion. Season with salt and pepper. Add soup and beans to hamburger and onions. Simmer 15-20 minutes. If it gets too thick, feel free to add a little water to the pan. I usually end up adding about a half cup of water.


Arrange spoonfuls of mashed potatoes on top of hamburger mixture. Sprinkle cheese on top. Bake at 350 for 25 minutes or until cheese is bubbly. Enjoy!
