Super Easy Slow Cooker BBQ Pork

Updated: May 12, 2021

Super easy, but still so delicious. Perfect for a weeknight dinner or a busy day! Just add some coleslaw and a bun and dinner is made!
Slow Cooker BBQ Pork

For as many times as I have had pulled pork sandwiches, I have never once made them myself. I like them. I just don't think it ever occurred to me to make them.

Well, in trying think of something pretty quick for dinners this week, the idea came up. It seemed easy enough. So we bought a pork roast, threw it into the slow cooker today, and for dinner tonight we were having pulled pork sandwiches at pretty minimal effort to us.

The roast we bought was pretty big, so we cooked it with a rub, froze half of it, and then added the bbq sauce. I think adding the rub gave it a bit more flavor. I think I would definitely do it this way again.

Slow Cooker BBQ Pork

2 teaspoons chili powder

1 1/2 teaspoon garlic powder

1 1/2 teaspoon brown sugar

1 teaspoon salt

12 oz bbq sauce of your choice

2-3 lb pork roast

1/4 cup water

Lightly grease bowl of slow cooker. Add enough of the water to just cover the bottom of the slow cooker. Combine chili powder, garlic powder, brown sugar and salt. Rub the spice mix on outside of the pork. Cook on low for 5-7 hours or high 3-4 hours.

When meat is tender, remove from slow cooker. Using forks, shred the pork to desired consistency. If there is a lot of liquid left in the bowl of slow cooker, remove it until there is only a couple tablespoons of liquid left.

Return the pork to the slow cooker. Add the bbq sauce. Heat on high for about 15-20 minutes, or until heated through. Serve on a bun and with coleslaw if desired.
