Taco Soup

This soup is so warm and hearty! This soup is delicious and it's made with mostly pantry staples. Easy to make, healthy and delicious, this soup is so good!
Taco Soup

With Rootstech happening this recently, I figured I would post a recipe from my childhood.


Growing up we didn't eat anything related to Mexican food at our house very often. When we did it was when my Dad was away at a meeting or doing something that meant he wouldn't eat dinner with us. My dad has a pretty strong aversion to anything that can be even remotely construed as Mexican. He doesn't like spicy things, and I think even taco seasoning was on that list.


The first time I remember eating taco soup, my dad was home for dinner. My mom set the pot on the table, and encouraged my dad to just try it. He could always have the leftovers from dinner the night before if he didn't like the soup. My dad also isn't big on soup. So this was a double whammy.


My dad tried it, and I think he was okay with it. Just okay. It probably will never be high on his list of foods he would pick. Actually, I seriously doubt it would even make the list.


If you aren't like my dad this is a good soup to try. It's a pretty easy soup to put together, and most people really do like this soup. Perfect for cold weather, this soup is hearty and filling. You can always add other beans, peppers, or additional toppings to change it up.


1 pound hamburger

1 medium chopped onion

1 package taco seasoning mix

1 large can (approximately 32 ounces) canned tomatoes

1 can red kidney beans--15 ounces, drained

1 can corn or package frozen corn

1 small can tomato paste or small can of tomato sauce

Optional toppings: avocado, grated cheese, sour cream, tortilla chips, etc...


Brown hamburger, onion together, drain grease from hamburger and add taco seasoning mix. Add large can of tomatoes, kidney beans, corn and paste or sauce. Add water (use the 32 ounce can to provide the additional water). Bring to boil and then lower the heat to simmer for approximately 30 minutes. Serve with grated cheese and corn chips. Should serve approximately 6-8 people.
