The Easiest Dinner Rolls

A few weeks ago, I sat down and made a list of foods I want to make. I mapped out when I wanted to make them for the year. I was all set and ready to go. I was excited. I started baking. But then I started seeing other recipes that I wanted to try. But when was I going to make those recipes?

I think I will always have more recipes I want to try. I will always feel that struggle of fitting those recipes into my day to day life and how to fit them all in. But this recipe. This recipe is so simple to add into my life. It takes about 10 or 15 minutes of hands on time at most. Most of it is just stirring a few things together, and then walking away. So easy!

To be honest, I don't think these are my very favorite rolls in the world, but they are a good dinner roll. And they are SO easy as far as bread recipes go. If you are looking for an easy and delicious roll for your next dinner, this is your recipe!

2 cups whole milk (can use 2% if needed)

1/2 cup butter, cubed

5 tablespoons sugar + 1 teaspoon sugar

1/4 cup of warm water

4 teaspoons yeast

3 large eggs, lightly beaten

1 1/2 teaspoons salt

About 6 cups flour

In a small bowl, heat the milk in the microwave for 90 seconds. Add butter to milk and let melt. Add 5 tablespoons of sugar and set aside mixture for about 5 minutes to continue to let cool.

Meanwhile, combine yeast, 1 teaspoon of sugar, and water in a large bowl. Set aside.

When yeast is starting to bubble, add milk mixture has cooled, add milk mixture to the yeast. Add eggs and salt. Add flour, one cup at a time, stirring between each addition just until there are no lumps remaining. The dough won't be smooth, but that is fine.

Leave the dough in the bowl, and cover with a towel or plastic wrap. Let rise about 45 minutes or until doubled.

Spoon dough into greased muffin tins, filling each cup to just before the top of the tin. Let rise another 45 minutes.

Preheat oven to 375. Bake the rolls for about 12-15 minutes, or until rolls have turned golden brown. Remove from oven and let cool for a minute before removing from pan. If rolls are stuck in the pan, run a knife around the edge of the rolls before removing from pan.

Makes about 25 rolls.
