This soup is seriously cozy and delicious. So many flavors meld together to create a soup that is hearty and filling. Made from Italian sausage, bacon, potatoes, kale and cream. All of those combine together to create a soup that will warm you head to toe. It's rich and creamy and completely packed with delicious flavors. What more could you want in a soup on a cold winter day?

My best friend always eats sausage on Groundhog Day. Ground. Hog. Ha! The tradition started with her grandpa and she has continued it. I think it's just a fun way to celebrate a holiday where most people don't do much except maybe watch a movie from the 90's.


Even without seeing the news that Punxsutany Phil had declared six more weeks of winter, people in Utah must have known winter was sticking around when they woke up to a blanket of snow this morning. As someone who really loves the snow, I am really good with more winter. I just hope that we get more snow with the expected cold.


So what to eat with the promise of six more weeks of winter that also uses sausage? This warm and cozy winter favorite soup!


This soup is made from Italian sausage, bacon, potatoes, kale and cream. All of those combine together to create a soup that will warm you head to toe. Most people know it from The Olive Garden, but this home version is easy to make and cheaper too.


The stovetop version of the soup is relatively easy to make. Begin by browning the sausage. Remove the sausage from the pot and add the bacon. After cooking the bacon, remove it from the pot. add the onion and garlic and cook until softened. Then add the liquid and the potatoes. Once they are softened, add the sausage, bacon, cream and kale. Once the cream is warmed and the kale as softened, you are ready to eat!

1 pound ground sausage (I like to use Italian sausage)

4 slices bacon, diced into 1/2 inch slices

1 onion, diced

2 garlic cloves minced

32 ounces chicken broth

4 russet potatoes scrubbed and diced into 1/2-inch cubes

¼ teaspoon crushed red pepper flakes (optional)

salt and pepper to taste (I start with about a teaspoon of salt and 1/4 teaspoon pepper and adjust as needed)

1 cup heavy cream

2 cups packed kale chopped

parmesan cheese, optional.


Heat a large pot over medium high heat. Add the sausage to the pot, breaking it up into crumbles. Cook through. Drain some of the fat. Remove sausage from pot and add the bacon to the pot. Cook the bacon through and remove from pot. Remove all but about a tablespoon of the drippings from the pot.


Add the onion and garlic to the pot and sauté until onions are cooked through; about 3-5 minutes.


Add chicken broth, potatoes, pepper flakes, and salt and pepper. Bring to a boil and simmer until potatoes are just starting to become tender; about 10-15 minutes.


Add sausage and bacon back to the pot. Add the kale and cream and heat through.


Serve with parmesan cheese and enjoy!
